I’d test on iPhone, Apple TV, Mac, and no matter movies or tv show not of the subtitle default language selection worked if there is an external subtitle.
E.g. a movie internal subtitle with English, Spanish, Dutch, Japanese, and an external Chinese subtitle.
In this situation, no matter the default language change, it will play an external subtitle. That’s a little bit weird.
How does Infuse determine Simplified Chinese or Traditional Chinese in the internal subtitle?
Infuse operates under the assumption that if there are external subtitles present, that they were put there for a reason…so it will prefer them over embedded subs. This may not always be 100% correct, but generally seems to be a pretty good indicator.
There’s a chance this could be changed in the future, and following this thread would be the best option.

Hope in the future subtitle selection can be change as:
Display an external subtitle if the external subtitle matches the default language option; otherwise, picks the embedded subtitle match to the default language.
