I jail broke my apple TV a couple years back and i've always just updated using the update in maintenance. However, It doesn't seem to allow me to update beyound 5.0. Do i need to jailbreak it again and reinstall everything again?

Updating via Maintenance only updates the FireCore apps - it does not update the underlying Apple firmware version.
If you want to go to a new firmware version then you need to repeat the jailbreak process for the target firmware release and re-install apps. This can be made easier if you have created a backup via maintenance so that when the apps are reinstalled you can restore the current settings.
The latest firmware for which a jailbreak is available is the 5.3 version. Apple is still signing the 5.3 release so the process should be relatively painless. There is no jailbreak (currently) available for any of the 6.x firmware releases so you cannot go to one of those releases and retain your system in a jailbroken state.
So you're saying that I can get 6.0+ but I just have to jailbreak it again with the updated firmware?
