As stated after the update today, a long Play press hovering over a TV series cover no longer brings up the options (mainly shuffle). This does happen on the main TV folder or Movies and Playlists still however
Yes, it’s a bit strange. Shuffle seems to work within seasons only, which I assume isn’t exactly how this feature is intended to work. It should work for seasons and also the series.
Glad to see it in the upcoming features list as a fix!
Confirming seeing the same: Holding play/pause for shuffle is now available only on the home screen. It was previously available with TV Shows.
Is this possible to fix?

This has been resolved in today’s 8.1.1 update.
Thanks for your patience. 
When holding play on a TV Show there is still no shuffle option. The shuffle option seems to only be available when selecting an episode on the home page, and there limited to that season only.
I would say this is not fixed.
Update: When switching back to library mode, the shuffle option is back.
