How does TMM work with Infuse? Does it create some kind of XML manifest files to group the seasons and episodes? Is there a reference document for these files? I have a simple SMB share myself and only have Infuse, and no other media manager like Plex or Kodi.

It creates an nfo file with all the metadata needed for the show or movie. The metadata it scrapes depends on what source (site) it scrapes from.
It fully works, just know that it’ll take a subscription to scrape from anywhere that isn’t TMDB.
Infuse’s support page states that nfo files don’t work with TV shows but it turns out that’s not the case and it does in fact work.
One last question, if I may, what would be the NFO file format? Does it have to be a specific one, or does the default (Kodi) just work?

I had the same question. When I tried this, I used Kodi. It seems to work fine so far, but I’ve only done this for one TV show.
Just tried this yesterday, but it didn’t work for me. Infuse ignored it.
While TVDB is correct and complete, the TMDB information on the Monogatari series is terrible: missing whole seasons and episodes, incorrect and mismatched information especially on alternate languages, incorrect artworks and posters, almost every unassigned episode sits in the Special section in bulk, incorrect ordering in episode groups; and to make matters worse everything is locked by administrators and there hasn’t been any progress in years.
The only thing that could help in this case is NFO file support to manually set everything right.
