How will my ATV4K find and access subtitles I’ve downloaded. The link below states it’s possible, but I’m curious as to where I need to store them so infuse can access them.

The subtitle files need to be saved in the same directory as the video file
As @munpip214 said, same directory and named to match the video file as discussed here.
