is it not possible to add a remote server with https: and a Username and password?

It is possible to manually add a server by selecting “Other Emby…” when adding the media server. This options should allow you to manually enter all the connection details for the remote Emby server.
Once on that screen, you may have to got into the advanced section to set the proper port and HTTPS settings.
