Is it possible to add video from either an SD card or USB hard drive when connecting an iPad to either via an Apple Lightning to USB or Lightning to SD adapter?
I'm thinking that this will allow me to carry mnay more movies when on vacation without the need to carry my laptop or, worse, my NAS!

It is not obvious from the description, but the device includes a Samba server, so you can connect to it from inFuse wirelessly as if it were a network share (I have not even found it mentioned in the User Guide). When you go into the device settings there is an option to activate/deactivate the Samba server. With the Samba server active you can then see the files that are on a SD Card/USB Stick/USB hard drive that have been inserted into the ApoTop.
Not a direct answer to achieving what you asked, but an alternative way of achieving what I think is the desired result?

Basically correct. although it is really a WiFi Access point rather than a router. Note that if using a USB stick then the Apotop can provide the power for the USB sticj. If using a USB hard drive then you probably need a way of powering the hard drive (a Y cable works OK for a 2.5" drive). The built-in rechargeable battery can power it for an hour or two. After that it needs to be powered - but it is USB powered so it can quite happily run off a laptop USB port.

Interesting. I guess you could get a 256Gb memory stick and fill that up with movies...
