With the way I have my files imported, usually what happens is the software doesn’t recognize it as a show, so when editing the metadata it’ll only show movies instead of the TV show. The only current way to fix this is to rename all the files to what the software recognizes them as for that specific show. It would be nice to be able to select multiple files, then mark them as episodes of a TV show so the metadata can be in line with what the files are, and so they get grouped together.
If you want to have manual grouping, you can do this by adding them to a Playlist or a Collection.
Unfortunately, there is no way to have these recognized as series items (even when manually selecting matching metadata) without using one of the recommended naming styles described in the link below.
